The perfect chocolate mousse

Here’s something to try over the weekend - a friend’s recipe for the most delicious chocolate mousses ever. Prepare for absolute melt-in-the-mouth heaven! Pure indulgence!

Ingredients (serves 6):
100g (3.5 oz) 70% dark chocolate, broken up (keep some separate to grate on top)
1 tbsp milk
2 eggs, separated
35g (1 oz) caster sugar
150ml (5 fl oz) double cream (plus extra cream to whip up for the topping)

Method:

1. Put chocolate and milk in a bowl over a pan of simmering water. When the chocolate has melted, stir to combine, and then leave to cool slightly.

2. Place two egg yolks and the sugar in a large bowl. Whisk till thick and creamy. Then whisk in the chocolate mixture.

3. Whip the cream in a bowl until stiff. Gently fold in the chocolate mixture.

4. Whisk the egg whites until stiff and gently fold into the chocolate mixture.

5. Spoon into individual dishes (very cute in little espresso or teacups) and refrigerate for at least 2 hours.

6. Top with a layer of whipped cream and grate some chocolate over the top.

7. If you like your mousse melt-in-the-mouth soft, take it out of the fridge and allow it come to room temperature before serving.
